I need a veggie-based snack. I’m not in the mood for a lot of chopping. It might be a particular time of the month, and I want something that tastes and feels like comfort food. I might also really, really, REALLY be craving salty snacks (like, if I was still the old me, I’d be snarfing a giant bowl of buttered, salted popcorn RIGHT. NOW.).
What I did:
I chopped the cucumber into 1/2-inch cubes and sliced the olives into rings, then I tossed them all together, and drizzled with 1/2 tablespoon of olive oil.
How it made me feel:
It totally satisfied my salt tooth, and made me feel virtuous at the same time. It felt like cheating, but it’s actually super good for me. Neat trick!
Why it works:
The salty bite of the olives contrasts really nicely with the cool, sweet-in-comparison cucumbers, and the olive oil – without the distraction of vinegar or lemon juice – has awesome, almost-like-grease mouth feel. Say what you want about healthy eating, sometimes I just really want to feel like I’m eating a greasy snack. (Don’t you?!)
One more thing:
According to Cook’s Illustrated, the best extra virgin olive oil you can buy at a run-of-the-mill grocery store is Lucini. I trusted them and tried the organic version. It’s delicious, and reasonably-priced. Try it!
